Delicate linguine for authentic Italian dinners
Pasta with clams sounds self-explanatory, but as with any self-respecting Italian recipe, pasta is never only pasta. For Linguine alle Vongole, we use this delicate ribbon pasta, which was introduced in the Italian cuisine 400 years ago. Linguine means “little tongues” in Italian, being more narrow and elliptical in shape than fettuccine. Linguine is usually paired with lighter sauces for perfect Mediterranean evening dinners.
The sublime simplicity of Linguine alle Vongole
At De’Medici we cook the perfect Linguine alle Vongole – bianco all the way. We soften garlic and chili in extra virgin olive oil. We add the baby clams and the white wine, and when the shells are open, we know that is the moment to add the linguine. We let the pasta rest in the sauce to absorb the full flavor of the clams. The last touch, before we serve it to you: we sprinkle the linguine with chopped fresh Italian parsley and a pinch of red chili flakes.
